A double bubble screen deflects the air flow that comes over the screen up higher.
Say a normal screen deflects the air flow and the moving air hits you mid chest height - a double bubble will deflect the air flow and it will hit you at head height.
Where on your body the air hits you will depend on your height and also how far you can get down behind the screen.
Notice that most of racing riders get right down on to the tank as the are racing - they are getting below the air flow.
With a D/Bubble you will not get knocked about by air as much as a standard unit when riding on the open road.

I got a double bubble for my zxr 250, it really does make a difference and was worth the extra money. And you get the other plus that they look a lot better then the standard.
